Mocha-Java is one of the most famous and historic blends in history, though its origins have come up for a little bit of discussion in the past few years. For many generations of coffee lovers, the combination of flavors from Yemen (intense berry and fruit, deep chocolate) with those from Indonesia (heavy body, savory and tart, earthy) created the perfect balance in the cup. With coffees from Yemen in somewhat short—and expensive—supply over the past several years, many coffee people have become creative with their Mocha-Java–inspired blends. We've done so here, marrying the fruity flavors of a Natural Ethiopian coffee with the lower-acid, smooth and savory profile of a coffee from Papua New Guinea, which is a nearby neighbor to Indonesia. This coffee is designed to create a rich and easy-drinking cup and will stand up nicely to anything from a medium to a somewhat darker roast.
