Background:
Comalapa is a municipality within the department of Chiapas in southern Mexico, on the border of Guatemala. This lot represents coffees from producers in Guadalupe Victoria as well as the surrounding municipalities such as Huizquilar, Pacayal, Buena Vista, and El Pacayalito. Typically, coffees here are picked ripe and depulped the following day, fermented for 18–24 hours, and then dried for 24–48 hours, weather dependent.
