Background:

Coffees in Sumatra are typically purchased depulped but in their mucilage by agents called "collectors," and brought to centralized mills to be hulled and then dried. This process, called Wet-Hulling orgiling basah, is the primary source of the classic "Sumatran" profile: earthy, savory coffees with heavy body.
