Background:

Coordinadora de Productores de la Zona Centro del Estado de Veracruz SC de RL de CV (COORPROVER) was founded in 2006, as a result of the coffee crisis that plagued the Mexican coffeelands in the late 1990s and early 2000s. The cooperative is located in the high mountains of Veracruz, and its leadership is committed to environmental conservation as well as the improvement of quality for all its members. "We firmly believe that coffee, beyond a simple agricultural product, is away of life, of culture," says COORPROVER representatives. "It is a hope of progress for [farmers] who are dedicated to it."

After the coffee is picked and depulped at the co-op mill, it's fermented dry for 14–21 hours, then washed twice and dried in mechanical driers for 32–36 hours.
